Pilgrim Pies

COOKIES:
2 eggs
2 c. light brown sugar
1 c. vegetable oil
1 t. vanilla
1 (15 oz.) can pumpkin
3 c. flour
1 T. pumpkin pie spice
1 t. baking powder
1 t. salt

FILLING/CREAM CHEESE FROSTING:
4 oz. cream cheese (softened)
2 t. vanilla
½ c. butter (softened)
4-5 c. powdered sugar

Mix cookie ingredients together.
Drop heaping tablepoons onto an ungreased cookie sheet.
Bake at 350 degrees for 12 minutes.
Let cookies cool completely.
Turn half the cookies bottom side up, spread icing on each.
Top them with remaining cookies (turned right side up).
Makes 10-14 Pilgrim Pies.
